SHRIMPS IN CHAMOY MANGO SAUCE

Ingredients

  • For the sauce:
  • 1/2 cup of mango pulp
  • 1/4 cup of lime juice
  • 2 tablespoons (1 oz) of El Chilerito Chamoy Mango Sauce
  • 2 tablespoons of butter
  • 1 garlic clove, minced
  • 2 tablespoons of ground chipotle chili
  • 1 tablespoon of finely chopped ginger
  • 1/4 cup of sugar

  • For the shimps:
  • 1 tablespoon of oil
  • 1/4 of a finely chopped onion
  • 1 garlic clove, minced
  • 300 g of clean and peeled shrimps
  • Salt to taste
  • 1/2 cup of mango chopped in cubes
  • 1 tablespoon of chopped chives for decoration
  • Lime to accompany with the meal


Steps

  • For the sauce:
  • Blend mango pulp with lime juice and El Chilerito Chamoy Mango Sauce to get an homogeneous mixture.
  • In a pot over medium heat, melt 2 spoons of butter and cook the garlic clove until fragrant. Add the chipotle chili, ginger and the sugar. Continue cooking until sugar is dissolved.
  • Add mango pulp and cook until the mixture thickens, season it with salt and reserve it.

  • For the shimps:
  • In a frying pan over medium heat, fry the onion and the garlic  until tender. Add the shrimps, season them with salt and pepper, put the mango sauce on top and cook them until they are cooked.
  • Add mango cubes, chives and serve them.
  • Accompany with lime.
