Ingredients
- 1 bell pepper
- 1 eggplant
- 1 long pumpkin
- 5 eggs
- 100 g of grated mozzarella cheese
- 2 chopped sausages
- 1 tablespoon of olive oil
- Salt and pepper to taste
- El Chilerito Mix sauce to taste
Steps
- Cut thick slices of the vegetables (bell pepper, eggplant and pumpkin). Extract the pulp and cut it into small pieces to maintain the contours of the vegetables.
- Mix the eggs with the chopped pulps, the striped mozzarella, the chopped sausages and season to taste.
- Place the edges of the vegetable slices in a pan with oil and season with a few drops of El Chilerito Mix Sauce until they are half cooked. Pour the egg mixture into the center of each vegetable frame. Cover until everything is cooked through.
- Serve on plates and add more El Chilerito Mix Sauce to taste.
